Yes, I spelled "chicken" wrong on purpose so you don't confuse it with animal flesh. This recipe can be modified so many different ways depending on your taste. You can also make a whole bunch of it and store it in the fridge for a few days. It’s really simple, yummy, and loved by all the non-vegans I have fed it to.
-2 cups vegan chicken of choice. Chopped. I personally really like “No Evil Foods” but there are plenty of other good brands out there. Most supermarkets are now carrying vegan meat substitutes!
-1/3 cup raisins or craisins...
-1/3 cup chopped bread and butter pickles or relish
-1 tbsp chia seeds (for a lil’ crunch)
-1/4 cup of your favorite vegan mayo. Lately mine has been Hampton Creek “Just Mayo”.
-1/2 tsp mustard powder
-salt and pepper to taste
-1/4 cup chopped onions
-1/4 cup chopped raw walnuts or pecans
-Mix all that sh*t up in a bowl. Easy peasy! All these amounts and ingredients are totally optional. Make it to your own taste. In the photos below, I made an open faced sandwich with some Miyokos cashew cheese, spinach and sprouts on some homemade sourdough bread. This also works great to add to any salad or wrap. It’s one of my favorite things to bring to work for lunch and It’s so fast!
